La passione, il coraggio e la fiducia nell’enorme potenziale qualitativo della Puglia sono gli elementi che hanno spinto la famiglia Antinori ad investire in questa regione, in particolare nelle zone di Castel del Monte e del Salento. La vicinanza dell’antico vulcano Vulture, il clima caratterizzato da una notevole escursione termica tra giorno e notte e la composizione dei terreni hanno una notevole influenza sui vigneti.
E’ nata così la Cantina Tormaresca di Masseria Maimè, in attività dal 2009. Modernissima, concepita secondo le più recenti dottrine sulla vinificazione, l’azienda, che si estende per una superficie di circa 500 ettari di cui 350 vitati e 85 ad uliveto, si sviluppa lungo la costa adriatica, immersa in un paesaggio unico di vigneti che nascono tra boschi e pinete e si perdono a vista d’occhio fino a confondersi con il mare.
Il Tormaresca Negramaro Salento IGT 2015 Masseria Maimè è un vino
prodotto da uve raccolte la terza settimana di settembre leggermente surmature,
in modo da esaltare il loro potenziale fenolico. Dopo la svinatura il vino riposa
in botti di rovere francese e ungherese, dove ha effettuato la fermentazione
malolattica, permanendoci 12 mesi. Segue un ulteriore periodo di 12 mesi di
affinamento in bottiglia. L’annata 2015 si è contraddistinta per un andamento
stagionale tendenzialmente secco e soleggiato, una delle migliori annate degli
ultimi venti anni.
Il colore è rosso rubino intenso, profuma al naso di amarena,
melograno, marmellata di fichi, ma anche anice e cannella, in bocca ha un
ingresso morbido, seguito poi da un tannino elegante ed una freschezza ben
equilibrata.
Si abbina bene con carni alla griglia e a formaggi
stagionati.
Piccola curiosità: alla Masseria si giunge percorrendo un
sentiero che si insinua tra pinete ed uliveti ed il suo nome deriva dalla
piccola chiesa che sorge fuori dalle mura. La cappella dedicata a S. Pasquale a
Maìme (contrada della zona) sorse per garantire ai contadini un posto dove
poter pregare durante la settimana quando erano lontani da casa.

Tormaresca Negramaro
Salento IGT 2015 Masseria Maimè is a wine produced from grapes harvested in the
third week of September slightly overripe, in order to enhance their phenolic
potential. After racking, the wine rests in French and Hungarian oak barrels
where remaining there for 12 months. This is followed by a further period of 12
months of refinement in the bottle. The 2015 vintage is characterized by a dry
and sunny seasonal trend, one of the best vintages of the last twenty years.
Deep ruby red,
medium intensity, olfactory notes of Red fruits, spices, with hints of figs
jam. Off dry, medium acidity, medium tannins high alcohol medium +body. Medium
intensity and finish
It goes well
with grilled meats and aged cheeses.
Curiosity: Masseria
can be reached by following a path that winds its way through pine forests and
olive groves and its name derives from the small church that rises outside the
walls. The chapel dedicated to S. Pasquale a Maìme (district of the area) was
built to guarantee the farmers a place where they could pray during the week
when they were away from home.
